"Cru" wines

Our "Cru" wines are made from Grillo and Nero d'Avola vines grown as small trees, whose grapes are carefully cultivated with animal power and harvested by hand in boxes.

The "CRU" line is destined for a niche market where a premium product is sought that enhances the qualities of the grape variety and the territory in which it is grown.

Zimmari Grillo – D.O.C. SICILY

A pure Grillo wine, obtained from grapes cultivated in reduced pesticide agriculture and nurtured using the "ALBERELLO" method: For the cultivation of this very small plot, we harness the strength of animals. Heavy Rapid Draught horses, equipped with all modern but ancient-concept equipment, are used. For the strictly manual harvest, we use wicker baskets of 10 or 15 kg each, which are then transported to the lorry with a cart. No mechanical means are used in this plot. It may seem like a whim at first glance, but it's the pleasure of the Marquises of Rampingallo to thank Mother Nature by cultivating as it was done in times long past. The strength of animals combined with the arms of men. Both the vine and those who work it endure a significant effort, but the joy and pleasure of obtaining a wine with indescribable qualities compensates for the toil and sweat. We can say that here, there is certainty in extracting from the land its lifeblood, which becomes a wine in very limited quantities, and this will remain so in the future. Expressive power and refinement of tannins are the distinctive elements. A new and authentic voice of Grillo grapes cultivated in the mid-hill area. An excellent interpreter, capable of expressing the best characteristics of this important grape variety from Sicilian tradition with modernity and pleasantness. The fermentation, at 10 - 12 °C, is constantly monitored. The ZIMMARI cru wines are full-bodied and soft, very tannic, and surprising in their immediate pleasantness.

Halycia Classic Method Sparkling Wine – D.O.C. SICILY

Mineral, lively, distinctive. This pure Grecanico sparkling brut made using the traditional method authentically represents the Grecanico grape, typical of the Trapani region. Enveloping and fragrant, this brut sparkling wine is elaborated using the traditional method, in contact with the yeast for 36 months. Casale Rocche is characterised by enchanting fine and continuous bubbles, while on the palate, it offers a delicate creaminess. The gentle and progressive pressing of whole grapes, following the tradition of Champagne, ensures the preservation of the aromas and acidity of the must. Subsequently, the addition of liqueur de tirage, in our case, initiates the refermentation, which continues with ageing on the lees for at least 36 months. The elegant aromatic ensemble of jasmine, linden, and acacia with hints of vanilla and warm bread crust cradles the palate in a sensory experience that becomes increasingly captivating with each sip.
